This Thai inspired noodle bowl is sweet and garlicky. Packed full of fresh veggies like shiitake mushrooms and cabbage, it’s pure comfort food.
Ingredients
8 oz Rice Noodles or Bean Thread Noodles
2 Large Carrots Julianne
¼ of a Large Head of Cabbage
11 oz Snow Peas, trimmed
5 oz Shiitake Mushrooms, stemmed and sliced thin
1 ½ Tbs Coconut Oil
1 tsp fresh Ginger, microplane grated
3 Garlic Cloves, microplane grated
For the Sauce:
½ C Vegetable Broth
1 Tbs Sesame Oil
2 Tbs Tamari
1 Tbs + 1 tsp Brown Sugar
½ tsp Red Pepper Flakes
½ tsp Himalayan Sea Salt
For Garnish:
2 Tbs Scallions, chopped
1 Tbs Sesame Seeds
