A traditional Armenian bulgur-based salad or side dish with tomato sauce, parsley, green peppers and onion.
Ingredients
1 cup bulgur (also called dried cracked wheat)
3 (8 ounce) cans tomato sauce
2 1/2 cups chopped parsley leaves
1 cup diced onion
1 green bell pepper, cored and chopped
6 scallions, white and light green parts thinly sliced
1/4 cup extra-virgin olive oil
1/4 cup fresh squeezed lemon juice
1 tsp. salt
1 tsp. sugar
1/2 tsp. black pepper
