Roasted kabocha squash, butternut squash and sweet potatoes are folded into wilted kale with fresh sage
Ingredients
1 small kabocha squash, about 1 lb / 450 g
1 small butternut squash, about 1.5 lbs / 680 g
2 sweet potatoes, about 1 lb / 450 g
olive oil
pinch cayenne pepper
salt
1 large leek, sliced into thin rings
1 bunch kale, stems stripped and discarded, leaves roughly chopped
1-2 Tbs chopped fresh sage
2 cloves garlic, chopped
