Light and fluffy vegan chocolate-espresso donuts with a beautifully pink blood orange glaze! Topped with a candied blood orange slice – perfect for Valentine’s Day!
Candied Blood Oranges:
1 cup sugar
3 cups water
1/2 cup maple syrup
1 blood orange, sliced thin and seeds removed
Chocolate-Espresso Donuts:
1 vegan egg (mix 1 Tablespoon flax meal with 3 Tablespoons water, let set for 15 minutes)
1/3 cup cashew cream/milk or other dairy-free milk
1 teaspoon distilled vinegar
2 Tablespoons coconut oil, melted
2 Tablespoons vegetable or canola oil
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/3 cup sugar
1/4 cup black cocoa powder (or regular cocoa powder)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
Blood Orange Glaze:
1 1/2 cups powdered sugar, sifted
2 Tablespoons fresh blood orange juice
3 Tablespoons vegan butter, melted
1 Tablespoon corn syrup
