Beans & Greens Burrito with Cashew Queso
In this veganized burrito, mushrooms stand in for meat and a spicy cashew queso adds plenty of creamy cheesiness!
Queso:
1/2 cup cashews soaked in water at least 2 hours
3/4 cup vegetable broth
1 tablespoon miso
1 tablespoon olive oil
1/4 red onion, chopped
2 garlic cloves, minced
1 jalapeno, seeded and minced
1 teaspoon cumin
1/2 teaspoon ancho chili powder (or other mild chili powder)
2 tablespoons nutritional yeast
1/4 teaspoon salt
Burrito:
1 tablespoon extra virgin olive oil
1/2 yellow onion, finely diced
8 ounces cremini or button mushrooms, quartered
1 bunch chard, stemmed and chopped
1 cup cooked brown rice
14 ounce can black beans, drained and rinsed
1/2 teaspoon cumin
1/2 teaspoon chili powder
5 100% whole wheat flour tortillas
