Black Bean and Kale Quinoa Patties
These delicious patties are crispy on the outside and packed with nutrition and flavour.
2 1/4 cups cooked quinoa (3/4 cup dry quinoa + 1 ½ cups water)
1 tablespoon olive oil
3 garlic cloves, minced
1 medium onion, chopped
3 handfuls of kale leaves (centre rib removed), washed, dried and finely chopped
3 eggs, beaten
1 can 540 ml no-salt-added black beans (1 3/4 cups), rinsed, drained and mashed slightly
3/4 cup panko breadcrumbs
1 teaspoon dried oregano
1/2 tablespoon dried basil
2 tablespoons capers, chopped
1 tablespoon lemon juice
2 tablespoons lemon zest
Black pepper
2 or 3 tablespoons olive oil for cooking
Lemon Garlic Aioli:
½ cup low fat mayonnaise
4 teaspoons lemon juice
1 tablespoon Dijon mustard
2 teaspoons minced garlic
4 teaspoons finely chopped capers
4 tablespoons chopped fresh parsley
