Black Bean Corn Quesadilla

This black bean and corn quesadilla is made in less than 20 minutes and is perfect for a Meatless Monday meal!

Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1/4 yellow onion, diced (about 1/4 cup)
  • 1/4 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can black beans, rinsed and drained
  • 1 cup canned corn, drained
  • 1/4 cup salsa
  • 1 teaspoon brown sugar
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon butter
  • 4 large tortillas
