Black Bean Tostadas with Cilantro Cream
Crispy tortillas piled high with black beans, pickled red onions, veggies and a creamy yogurt cilantro sauce!
Tostada:
1/2 red onion, thin-sliced
1/2 cup apple cider vinegar
1 teaspoon salt
1 tablespoon sugar
2 tablespoon extra-virgin olive oil, plus more if needed
1 red bell pepper, stemmed, seeded and diced
1/2 large yellow onion, diced
3 cloves garlic, minced
1/2 teaspoon cumin
2 cans black beans, drained and rinsed
1/4 cup water
8 corn tortillas
1 cup grated sharp cheddar cheese (optional)
2 cups shredded lettuce
1/2 cup chopped tomatoes
1/2 cucumber, seeded and diced
Cilantro Sauce:
1 cup plain, organic yogurt (preferably full fat or 2%)
1 cup cilantro
Juice from 1/2 lime
