Blueberry-Thyme Pie Bars are an easy and quick way to get your summer pie fix!
Ingredients
For the Crust and Topping Layer:
2 cups all-purpose flour (I used King Arthur)
1 cup almond flour (I used King Arthur)
1 cup sugar
1 tablespoon fresh thyme leaves
1 tsp. baking powder
1/4 tsp. salt
Zest from 1 lemon
1 cup (16 tablespoons) unsalted butter, cubed and chilled
1 egg
1 tsp. vanilla extract
1 tsp. almond extract
For the Blueberry Layer:
4 cups fresh blueberries
1/2 cup sugar
1 tablespoon corn starch
1 tablespoon fresh thyme leaves
Juice from 1 lemon
