Bourbon-Cherry and Almond Dutch Baby

A Dutch baby with bourbon-soaked cherries, almonds and bourbon whipped cream.
Ingredients
For the Pancake:
2 cups fresh cherries, stemmed and pitted
2-3 tablespoons bourbon (I used Maker’s Mark)
4 eggs
1/2 cup whole milk
1/2 cup all-purpose flour (I used King Arthur Flour)
1 tablespoon granulated sugar
1 tsp. almond extract
1/8 tsp. salt
4 tablespoons unsalted butter
1/3 cup sliced almonds, toasted
Powdered sugar for dusting, if desired
Maple Syrup for serving, if desired
For the Whipped Cream:
1 cup heavy whipping cream
½ tsp. almond extract
1 tablespoon sugar (granulated or powdered sugar will work)
2 tsp. reserved bourbon
