These Cabbage Rolls make an incredible tasty vegan dish with a great creamy and crunchy texture
Ingredients
1 medium sized Savoy Cabbage
6 medium sized potatoes (around 1kg/2Ibs)
4 cups of sliced fresh mushrooms (around 1/2kg/1Ib), portabella, porcini, oyster mushrooms etc. or a mix
2 onion
3 garlic cloves
1 cup cashews soaked for at least a couple of hours or overnight
1 cup water
7 tablespoons extra virgin olive oil, divided
1/4 teaspoon freshly ground nutmeg
1 tablespoon fresh or dried thyme
Splash of white wine
1/4 cup raw almonds
1 scallion
1/4 teaspoon cumin seeds
Sea salt & freshly ground black pepper to taste
