Carrot, Apple and Thyme Oatmeal

The combination of carrots, apples and thyme may sound unusual, but trust me: it works (and is actually quite addictive!). The carrots and apple also increase the volume of the oatmeal, creating two large bowls of goodness
Ingredients
1 cup almond milk
1 cup water
½ cup steel-cut oats
Pinch of salt
2 carrots, grated
1 apple, grated
3 – 5 sprigs of fresh thyme, stems removed
1 teaspoon vanilla extract
Chopped walnuts and raisins, to serve
