This is a simple and refreshing glass noodle salad. It took less than 20 minutes to make from scratch. It is a wonderful choice to serve this dish with the other rich dishes.
Ingredients
3 cups water
2 oz glass noodles
2 medium size carrots (approximately 5 oz)
½ medium size cucumber (approximately 7 oz)
2 cloves garlic, finely chopped
1 tsp salt
1 tsp crushed chili pepper
(optional) 1/2 tsp Sichuan red pepper corn powder
1 green onion, finely chopped
1-1/2 tbs canola oil
1 tsp sesame oil
1 tsp soy sauce (gluten-free if desired)
1 tbs apple cider vinegar
