Try this easy burrito bowl to ease yourself back into the weekday routine. It’s really easy and can be modified to match your Chipotle-like cravings. I can think of so many variations of this bowl. Next time I might try black beans and guacamole, or chopped tomatoes and cheese on top. It comes together in under 30 minutes.

1 head cauliflower
1 red onion
1/4 cup corn
1/4 cup chopped carrots
1 large sweet potato
2/3 can chickpeas
