These Chickpea and Beet Vegetarian Meatballs are a sweet and spicy protein packed dish that are great as for dinner or even an appetizer!
Ingredients
1 roasted beet, chopped
1 15 oz. can chickpeas, drained
2 tablespoons liquid smoke
2 teaspoons vegan Worcestershire sauce
¾ cup breadcrumbs
2 tablespoon coconut or olive oil
Salt & Pepper to taste
1 tablespoon Maple syrup
5 cloves garlic, minced
Crushed red peppers
1 Flax egg (3 tablespoons flax meal plus 1 tablespoon water)
