Chickpeas, zucchini, & tomatoes spiced with cumin, coriander, cinnamon, & turmeric served over quinoa.
Ingredients
1 cup water
3/4 cup uncooked quinoa, rinsed and drained
1/2 tsp. kosher salt, divided
1 tbsp. extra-virgin olive oil
1 1/2 cups chopped onion
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. ground cinnamon
1/2 tsp. turmeric
4 garlic cloves, chopped
3 cups Sun Gold or cherry tomatoes, halved
1 (15 oz.) can unsalted chickpeas, rinsed and drained
1 medium zucchini, halved lengthwise and thinly sliced
1/4 tsp. freshly ground black pepper
