A recipe for a chilled soup with lettuce, cucumber, peas and fresh herbs. Perfect for lunch or a light dinner during the Summer!
Ingredients
1 head Boston lettuce, leaves separated
1 large cucumber, peeled and chopped
1 cup peas (you can use fresh or frozen)
1 cup buttermilk
2 scallions, white and light green parts roughly chopped
1 tablespoon fresh mint leaves
1 tablespoons fresh dill
Juice from 1 lime
1 tsp. diced jalapeño pepper
1 tsp. salt
1 tsp. black pepper
