Chocolate Muffins with Plums
These chocolate muffins are unbelievably moist but still fluffy and light in texture. Their intense chocolate flavor marries nicely with the slight tartness of the juicy plums.
1 tablespoon (14g) chia seeds + 1/4 cup (60ml) milk of choice (I used almond) or 1 egg
3/4 cup (190g) yogurt of choice (I used soy)
1/4 cup (60g) unsweetened applesauce
3 tablespoons (42g) coconut or canola oil
1/4 cup (80g) date syrup (or other liquid sweetener, only the flavor might change slightly)
2 teaspoons vanilla
1/2 cup (110g) xylitol, coconut sugar or brown sugar
1 cup (120g) whole wheat flour
1/3 cup (30g) cocoa powder
1/2 teaspoon salt
1 teaspoon baking soda
3/4 teaspoon baking powder
1 and 1/2 cup (240g) chopped plums
