An amazing soup that has a creamy tomato broth, chunky vegetables and hearty chickpeas. Definitely a soup that eats like a meal!
Ingredients
3 lbs tomatoes, sliced
½ cup cashews, soaked for at least 4 hours and drained
olive oil
4-6 stems thyme, leaves removed
1 head of garlic
3 L water or stock
1 onion, sliced
2 large carrots, sliced into half moons
2 ribs celery, sliced
8 sage leaves, chopped
pinch of red pepper flakes
1 tbsp balsamic vinegar
1 14 oz can chickpeas, drained and rinsed
4 kale leaves, stems removed and chopped
