Citrus and olive oil polenta pancakes with blood oranges. Vegan + gluten-free.
Ingredients
3/4 cup (144g) cornmeal
3/4c (91g) corn flour or all purpose flour
1/4 teaspoon salt
1 teaspoon (6g) baking powder
1 tablespoon (8g) coconut sugar
zest of 1 lemon
zest of 1 orange
1/3 cup (100ml ) olive oil
1 cup (250ml) nut milk + 1/4 cup more for the next day
2 tablespoons ground flax + 6 tablespoons water
1-2 tablespoons coconut oil for cooking
your sweetener of choice – maple syrup, agave, or raw honey – to serve
blood oranges – to serve
