Cranberry Crunch Baked Oatmeal
A make-ahead holiday breakfast or crunch dish with the tart pop of cranberries.
Crunch Topping (makes extra, See: Notes):
OR substitute 1 cup shop-bought granola (preferably plain, free of dried fruit)
2 cups rolled oats
1 tsp cinnamon
½ tsp salt
2 tbsp coconut sugar
2 tbsp coconut oil, melted OR olive oil
2 tbsp honey OR maple syrup
Baked Oatmeal:
2 cups rolled oats
1 tsp baking soda
½ tsp baking powder
½ tsp ground cinnamon
½ tsp ground ginger
½ tsp sea salt
1.5 cups almond milk OR milk of choice OR water
½ cup orange juice
1 cup fresh or frozen cranberries
1 cup Crunch Topping, from above OR substitute 1 cup shop-bought granola (preferably plain, free of dried fruit)
