Less than 30 minutes for this tasty, healthy Cream of Pea Soup with kamut crostini, cranberries, walnuts and soy cream.
Ingredients
1/2 shallot, minced
1/2 garlic clove, minced
2 Tbsp butter
250 g canned or frozen peas, drained and rinsed
1/2 tsp ginger, grated
400 ml vegetable broth
salt and pepper to taste
1 Tbsp dried cranberries
1 Tbsp walnuts, chopped
1 slice of gluten-free bread (I used Kamut)
75 ml vegetable cream (I used soy cream)
pinch dried basil
