Creamy Peach Maple Porridge

A yummy vegan peach & maple pecan buckwheat porridge. This is an amazing and delicious summer breakfast!
Ingredients
1/4 cup buckwheat groats (I use Bob’s Red Mill, but any brand will do – you can also substitute other grains like rolled oats, teff, amaranth, quinoa, etc.)
3/4 cup water
1/4 cup almond or coconut milk
1 peach, pitted & sliced
1 tbsp pecan or other nut butter
1 tbsp 100% maple syrup
1 tsp cinnamon
Optional toppings:
Granola
Chopped pecans
Unsweetened coconut flakes
Chopped dried fruit
