This creamy spring pasta with oyster mushrooms, asparagus and mint was inspired by a trip to the farmers market.
Ingredients
8 ounces fresh or whole grain pasta
2 teaspoons extra virgin olive oil
½ bunch of asparagus, trimmed, cut into thirds
¼ lb oyster mushrooms, chopped
¼ cup creme fraiche
2 tablespoons mint
1 cup peas, defrosted
4 ounces fresh mozzarella, cubed
