Crispy roasted potatoes with a spicy romesco inspired sauce! Served with garlicky braised kale and a fried egg for a satisfying meal!
Ingredients
Sauce:
1 large tomato, cut into 8 wedges
1 red bell pepper, cut into thick slices
1/2 red onion, cut into 1/2-inch wedges
4 garlic cloves, unpeeled
1 tablespoon olive oil
1/2 cup almonds
1 tablespoon balsamic
1 teaspoon smoked paprika
1-2 tablespoons harissa
1/4 cup parsley
Potatoes:
3 lbs Yukon gold potatoes, scrubbed and cut into 3/4-inch cubes
2 tablespoons extra virgin olive oil
Zest of 1 lemon
