Crustless Breakfast Tarts with Mushrooms and Goat Cheese (Low-Carb, Gluten-Free)
The purchase of a lovely new tart pan inspired these Low-Carb and Gluten-Free Crustless Breakfast Tarts with Mushrooms and Goat cheese. The custardy texture of the tarts was really delicious.
4 oz. goat cheese, crumbled and softened (Use the type of goat cheese that comes in a log.)
1/4 cup milk, half and half, or cream
2 T finely grated Parmesan
12 oz Crimini (Baby Bella) mushrooms, washed and sliced
2-3 tsp. olive oil (depending on your pan)
1 tsp. Spike Seasoning (or use any all-purpose seasoning blend that’s good with eggs)
fresh-ground black pepper to taste
8 eggs, beaten
2 green onions, thinly sliced
6 T grated low-fat Mozzarella cheese
