Deconstructed Spring roll slaw
An easy and delicious slaw inspired by one of my favourite dishes: Spring rolls! Also features on my post: a guide to salads, so that you never get bored of eating crudités anymore!
1 cucumber
3 carrots
5 to 10 lettuce leaves, depending on the size (or cabbage/red cabbage leaves)
a handful mungo bean sprouts
2 tbsp finely shredded mint
1 tbsp finely shredded cilantro (optional)
Dressing :
2 tbsp smooth, unsalted peanut butter
1 tbsp soy sauce (use GF if needed)
1 tbsp lime juice
1 tsp sesame oil (optional)
1 small garlic clove, peeled and roughl chopped
1 piece ginger, roughly the same size as the garlic clove, peeled and roughly chopped
1 tbsp sugar or maple/agave/rice syrup
1-2 pinch red pepper flakes
To Serve :
dry roasted, unsalted peanuts, crushed
chopped scalion
