Ingredients
For the salad:
1 can of chickpeas (garbanzo beans)
1/2 red pepper
1/2 – 1 courgette
1 carrot
1 spring onion
coriander and parsley, chopped
For the dressing:
1 tsp of unrefined sea salt
1 tbsp balsamic vinegar
1 tsp tahini
1 tsp tomato puree
1 tsp green peppercorn mustard
3 tbsp extra virgin olive oil
