1 lb. fresh Fava Beans, shelled
1 Tbsp. Butter
1 Tbsp. Olive Oil
1 c. Arborio Rice
½ c. Dry White Wine
3 c. Vegetable Stock (homemade or low-sodium), hot
¼ c. Mascarpone Cheese
½ c. grated Parmesan Cheese
