This amazing Marinara sauce from freshly roasted cherry tomatoes and bell pepper together with vegan sausage slices makes any pasta irresistible.
Ingredients
8 oz (250 g) whole wheat pasta of choice
8 oz (250 g) cherry tomatoes
3 bell peppers (2 red and one of color of your choice), divided
1/2 cup (100 ml) red wine optional
8 oz (250 g) vegan sausage
2 Tbs olive oil
herbs of choice
nutritional yeast for garnish or parmesan (if you are not vegan)
1 onion, peeled
2-3 cloves of garlic
pasta water to thin the sauce
salt and pepper to taste
