Vegan & gluten-free sushi two ways: bright & bold ginger lime cashew cheese with zucchini and pear, and creamy spicy wasabi avocado with apple and broccoli slaw!
Ingredients
For the pear zucchini rolls:
3 nori sheets
1 medium zucchini
1 Asian pear
1/2 cup cooked buckwheat groats
1/4 cup ginger lime cashew cheese (recipe follows)
For the ginger lime cashew cheese:
1 cup raw cashews
2 tbsp nutritional yeast
1 lime, juiced
1 knob ginger
1/4 cup water
For the apple broccoli rolls:
3 nori sheets
1 medium apple
1/2 cup broccoli slaw
1/2 cup cooked buckwheat groats
1 tsp wasabi
1 ripe avocado
