Ingredients
4 slices whole grain bread
1/4 teaspoon olive oil
1/2 cup ricotta cheese
1/4 to 1/2 teaspoon grated orange peel
1/2 teaspoon fresh squeezed orange juice
3 small roasted golden beets, cooled and sliced
1 cup fresh baby spinach
1/2 cup mashed avocado, about 1 medium avocado
