Ingredients
Salad:
1½ lbs baby/miniature or fingerling potatoes
1 tsp avocado oil or coconut oil
2 cups baby spinach, tightly packed
Dressing:
1 cup fresh parsley, packed
2 tbsp raw pumpkin seeds
2 tbsp fresh lemon juice
1 tbsp flaxseed oil
2 tsp pure maple syrup
½ tsp sea salt
pepper to taste
2-3 tbsp water
