This grilled corn summer salad with pesto is a seasonal twist on classic corn tomato salad with fresh corn, juicy peaches + creamy burrata.
Ingredients
4 ears organic corn, husks removed
1 tablespoon melted ghee (I recommend 4th and Heart)
3 ripe peaches, diced
1 cup cherry tomatoes, halved
¼ cup Arugula Pesto
salt and pepper, to taste
2 balls burrata cheese, torn into pieces
