Healthy Banana Nut Muffins
Simple and wholesome with a hint of nutmeg in every delicately sweetened bite, these lowfat and low sugar muffins are absolute perfection on a chilly fall morning. So many things to love about this recipe, but I have to say that one of my favorites is how simple it is. Bananas, applesauce, walnuts, flour…. ingredients you most likely already have on hand.
1 cup white whole wheat flour
1 cup all purpose flour
2 teaspoon baking powder
1 teaspoon baking soda
2 teaspoon cinnamon
1/4 teaspoon nutmeg
3 over-ripened bananas, mashed
2 tablespoon oil
1 egg
1/2 cup unsweetened applesauce
1/3 cup brown sugar, packed
1 teaspoon vanilla
3/4 cup cashew milk (any milk is fine)
1/4 cup walnuts, chopped
1 tablespoon granulated sugar
2 tablespoon walnuts, chopped
