Easy, healthy vegetarian Mexican casserole with quinoa, black beans, corn, tomatoes, and cheese. This is a crowd pleaser!
Ingredients
1 cup cooked quinoa
2 cups cooked black beans
1 cup corn kernels
1 cup halved cherry tomatoes
1 red bell pepper, diced
1 yellow bell pepper, diced
⅓ cup chopped red onion
1½ tablespoons lime juice (1 lime)
1 teaspoon smoked Spanish paprika (I use Pimentón Ahumado)
1 teaspoon ground cumin
2 teaspoons kosher salt
¼ teaspoon red pepper flakes
1 cup grated Fresca Oaxaca Mexican cheese
1 cup grated Monterey Jack cheese
1 tablespoon lightly salted pumpkin seeds
