Honeyed Apple, Sweet Potato & Chickpea Bowls
A traditionally-inspired Rosh Hashanah recipe for the holiday.
Spice Mix
2 tsp ground cumin
2 tsp sea salt
1 tsp fennel seed
½ tsp cinnamon
½ tsp ground pepper
½ tsp smoked mild or regular paprika
¼ tsp chili flakes (optional)
Stew
1 cup water
2 medium sweet potatoes, peel intact, and roughly chopped
2 cloves garlic, roughly chopped
1 apple, peel intact, cored, and roughly chopped
1 fresh tomato, roughly chopped
1 small onion, roughly chopped
1 tbsp grated fresh ginger
2 tbsp apple cider vinegar
1 tbsp coconut butter (not coconut oil)
1 tbsp coconut oil
1 tbsp honey
2 cups cooked chickpeas
For Serving
1 cup uncooked brown rice + 1¾ cups water
Plain yogurt of choice (dairy or non-dairy)
Fresh herbs of choice, sliced
