These lemon zucchini muffins are fluffy, moist, and filled with poppy seeds and chopped walnuts. They’re so good that you won’t just eat the muffin top!
Ingredients
Oil or natural cooking spray for greasing pan
1 and 1/2 cup whole wheat pastry flour
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large egg
2/3 cup sugar
1/2 cup unsweetened applesauce
1/3 cup canola or vegetable oil
2 TBS yogurt
2 tsp pure vanilla extract
1 medium zucchini, grated
2 lemons, zested
1 TBS poppy seeds
1/4 cup walnuts, chopped
