I love this gluten-free and vegan lentil loaf, especially served with mushroom gravy and mashed potato! Such a hearty vegan meal, jam-packed full of nutrition and veggie goodness.
Ingredients
1 medium zucchini
2 carrots (medium-sized)
1 cup frozen peas
2 Tablespoons Psyllium husk
1 tin lentils (420g)
1 cup walnuts
1 cup quinoa flakes
1 cup passata
1 clove garlic
1 teaspoon Italian herbs (dried) or about 3 teaspoons fresh herbs
½ teaspoon chilli flakes
