Greek spiced baked potato wedges topped with cucumbers, tomatoes, olives and served with a garlic-scallion yogurt sauce!
Ingredients
3 lbs Yukon gold potatoes, cut into wedges
1/4 cup extra-virgin olive oil
8 garlic cloves, peeled and minced
1 tablespoon dried oregano
1 1/2 cups halved cherry tomatoes
1/2 large cucumber, chopped
3/4 cup feta, crumbled
1/3 cup chopped Kalamata olives
1/4 cup chopped parsley
Garlic Scallions Sauce
3/4 cup plain Greek yogurt
2 scallions, chopped
1 teaspoon extra-virgin olive oil
1 garlic clove, minced
1/4 teaspoon dried dill
