Low Carb Ratatouille
Today’s special is Ratatouille, the French Provencal vegetable stew. The tastes and colors of this dish just pop.
Ingredients
1 unpeeled eggplant, cubed
1/3 cup olive oil
2 Cloves garlic, minced
1 zucchini, cubed
1 tsp salt
1/2 tablespoon dried thyme
1/4 teaspoons black pepper
1 sweet red bell pepper, cubed
1 tomato, chopped
1 yellow summer squash, cubed
2 tablespoons balsamic vinegar
garnish with chopped parsley
