Ingredients
3 cups old fashioned oats, divided (certified gluten free, if necessary)
1 cup unsweetened shredded coconut
1 cup pecans, roughly chopped
1/2 cup uncooked quinoa
1 tablespoon chia seeds
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 cup melted coconut oil
1/2 cup maple syrup
1 tablespoon vanilla extract
