Crispy roasted chickpeas tossed in a lemony garlic oregano dressing are so versatile, perfect by themselves or added to soups & salads.
Ingredients
For chickpeas:
2 x 15 oz cans of chickpeas
1 tbsp oil
cooking oil spray
For dressing:
1 tsp lemon juice
1 tsp red wine vinegar (or another tbsp lemon juice)
1/4 tsp garlic powder
1/4 tsp dried oregano
1/2 tsp salt
1/4 tsp onion powder
1/4 tsp stevia powder
