Ingredients
For the pie crust:
3/4 cup unsalted butter
2 1/2 cups all purpose flour
3 tbsp granulated sugar
1 pinch of salt
1 1/2 tbsp water
1 large organic egg
For the filling:
200g fresh strawberries
200g fresh rhubarb
1/2 lemon zest
2 large eggs
4 tbsp almond flour
1/2 cup granulated sugar
For the meringue:
4 egg whites
1 pinch of salt
1/2 cup icing sugar
