A vegan and mayonnaise free potato salad with scallions, garlic, parsley, lemon and spices. This is the perfect Summer side dish.
Ingredients
2 lbs new potatoes (keep the skins on)
6 scallions, white and light green portions thinly sliced
4 garlic cloves, peeled and minced
1/3 cup extra-virgin olive oil
4 tablespoons lemon juice
3/4 tsp. cumin
3/4 tsp. salt
1/2 tsp. black pepper
1/8 tsp. allspice
1/8 tsp. coriander
1 1/2 cups Italian parsley, roughly chopped
