Mini After Eight Cake {two ways}
Fancy a cake but not the temptation to eat half of it all by yourself? The answer is simple: make this decadent mini cake, flavoured like traditional After Eight mint thins, with a healthy avocado (!) peppermint frosting. It’s always after eight somewhere…
For the cake:
150g (1/2 cup) plain flour, sifted
60g (1/2 cup) coconut sugar
2-3 tbsp cocoa powder, sifted
1 tsp baking powder
2 flax ‘eggs’
120ml (1/2 cup) coconut oil, melted
1 tsp vanilla paste
250ml (1 cup) almond milk, slightly warmed
For the frosting:
1.5 avocado (this is what I had on hand, feel free to use two, but no less than this)
1 tsp peppermint extract
3 tsp Truvia (or Stevia)
a few drops of green colouring (optional)
