MISO GLAZED TOFU & VEGETABLES WITH BAMBOO RICE
This simple, healthy stir fry dish will make you totally forget about greasy take out.
1 block of firm tofu pressed and cut into cubes
1 tablespoon sesame oil
1 yellow onion chopped
2 garlic cloves minced
2 carrots peeled and chopped
1 red bell pepper chopped
1 cup of mushrooms de-stemmed and sliced
½ of a small head of red cabbage chopped
1 small head of broccoli chopped
1 cup of rice of your choice cooked accordingly
For Miso Sauce:
3 tablespoons of mellow white or yellow miso paste
1.5 tablespoons maple syrup
1.5 tablespoons sesame oil
1.5 tablespoons rice vinegar
1.5 teaspoons soy sauce (or tamari to keep it GF)
2 teaspoons tahini
juice from 1 lime
2 teaspoons Siracha
2 tablespoons water
2 tablespoons sesame seeds (optional)
