This Mushroom & Spinach Quinoa Risotto is so tasty and best of all it is vegan, dairy-free and gluten-free.
Ingredients
2 tablespoons coconut oil (you can also use olive oil)
1 medium onion, diced
2 cups mushrooms, sliced
1/2 cup white wine (organic wine is best, if you can find it)
1 teaspoon dried sage
1/2 teaspoon dried thyme
1 1/2 cups quinoa, rinsed
2 cups vegetable stock (organic, natural or home made is preferred)
2 cups baby spinach
Nutritional yeast, to taste
Salt, to taste
