4 cups small pasta shapes
1 can black beans
1 yellow pepper diced
1 red yellow diced
1 cup sweet corn
1 jar diced tomatoes
1 cup enchilada sauce
1-2 tbsp taco seasoning
4 cups water or broth
1/2 cup grated cheddar plus extra to top (optional)
cilantro, cherry tomatoes, lime wedges to serve (optional)
