One Pot Lemon and Sun-dried Tomato Pasta

A quick and healthy meal that everyone will love! Vegan and can easily be made gluten-free too.

8 ounces whole grain spaghetti
1 small onion (or 2 shallots), thinly sliced
4 garlic cloves, thinly sliced
3 cups greens, chopped (such as kale, swiss chard, or spinach)
1/2 teaspoon fine sea salt
1/4 teaspoon pepper
3 cups water
8 ounces marinated sun-dried tomatoes, chopped
zest and juice of 2 lemons
